WINEMAKING:
The grapes are vinified separately in hyper-reduction (with dry ice) to best preserve the aroma and color.
Fermentation is conducted at a controlled temperature of 15-16 °C. and once finished, after the first decanting, we proceed with the assembly of the three wines.
